Mylar bags are aluminum-laminated pouches that block light, moisture and oxygen far better than a plastic bucket on its own. Pair one with a correctly sized oxygen absorber and a dry staple like white rice goes from a two-year pantry item to something still edible in twenty. The method is simple. The ways people ruin it are boring and repeatable: wrong bag thickness, too few absorbers, a seal that only looks closed, or a food that never belonged in there.

What the Bag Is Actually Doing

Three things spoil dry food: oxygen, moisture and light. Oxygen drives the fats in grain rancid and lets insect eggs already in the flour hatch. Light degrades vitamins. Moisture invites mold. The aluminum layer inside a Mylar bag stops all three cold, which is why sealed food goes flat-tasting slowly rather than going bad fast.

A food-grade HDPE bucket does none of that. It is a rodent shield and a crush shield. Over five or ten years, plastic buckets pass a small amount of gas and pick up odors from whatever is stored near them. The bag is the barrier; the bucket is the armor. Use both when you can, and understand which one is doing which job.

Thickness: 5 Mil Is the Sane Default

  • 3.5 mil — cheapest, easiest to seal, fine for soft contents inside a bucket. Dry pasta and split peas will eventually work a pinhole through it.
  • 5 mil — the one to buy if you only buy one. Tough enough for rice, beans and oats, still flexible enough that a cheap impulse sealer closes it every time.
  • 7.5 mil — for bags that will sit on a shelf with no bucket around them. Stiff, awkward to fold, and the cut edges are sharp enough to slice a finger. Wear gloves.

Buy bags with a genuine foil layer. Hold one to a bright light: you should see nothing at all. If a faint glow comes through, it is metallized film, not laminated foil, and its oxygen barrier is a fraction as good.

Oxygen Absorbers, Sized by Bag Volume

Absorbers are rated in cubic centimeters of oxygen they can take up. Since air is roughly 21% oxygen, you need about 210 cc of absorber per liter of trapped air, and dry food leaves a lot more air between the grains than people expect. Beans and elbow pasta are mostly air pockets; flour is nearly solid. Err high. A surplus absorber costs pennies. An undersized one costs the whole bucket.

Two 1,000 cc absorbers work as well as one 2,000 cc unit, so buy whatever size is cheapest per cc. Absorbers start working the moment the vacuum pouch opens and are largely spent after 15 to 20 minutes in open air. Lay out every bag first, fill them all, then open the absorbers and move fast. Leftovers go straight into a canning jar with a tight lid, not back in the torn pouch.

Safety: Oxygen absorbers create a low-oxygen environment, which is exactly the condition Clostridium botulinum needs. Seal only bone-dry foods — under about 10% moisture. Never put fresh produce, home-dried fruit that is still pliable and tacky, jerky, or anything with visible oil sheen into a sealed Mylar bag. If a bag ever smells off or the contents look wet on opening, throw it out without tasting.

What Goes In, and What Never Does

The dividing line is fat and water. Fat goes rancid whether oxygen is present or not, just slower, so oily foods have a short ceiling no matter how well you seal them. Water is a hard no.

  • Excellent: white rice, hard wheat, dry beans, rolled oats, pasta, sugar, salt, potato flakes, freeze-dried fruit and vegetables.
  • Works, but shorter: white flour and cornmeal — the milling exposes oils, so plan on ten to fifteen years rather than thirty.
  • Don’t: brown rice, whole-wheat flour, nuts, seeds, granola, chips, jerky, brown sugar (it hardens into a brick), commercial dried fruit that is still soft.

Salt and sugar do not need an absorber at all. They will not spoil; they just need to stay dry. Sealing them with an absorber wastes the absorber and, in sugar’s case, can leave you chiseling at a solid block.

The Seal Is the Whole Job

Mylar seals by melting the inner plastic layer, which needs roughly 375–425°F held for a couple of seconds with firm pressure. Three tools do this well: a bench impulse sealer, a flat hair-straightening iron with adjustable heat, or a household clothes iron pressed against a board along the bag’s top edge.

Order of operations matters. Fill the bag, seal all but a two-inch gap at one end, drop in the absorber, press the air out with your forearm, then close that last gap. Wipe any dust off the seal line first — a few grains of flour caught in the weld make a channel that leaks for years without anyone noticing.

Check the work the next day. A good bag draws down hard and shrinks tight around the contents, like a vacuum-packed brick. If it is still soft and puffy after 24 hours, either the seal leaked or the absorber was already spent. Open it, add a fresh absorber and reseal an inch lower.

Where the Buckets Live

Temperature is the variable nobody controls and everybody ignores. As a rule of thumb, every 10°F of extra storage temperature roughly halves how long the food stays good. Rice that would last thirty years in a 60°F basement might give you eight in a 95°F attic over the garage. A cool interior closet beats a heated outbuilding every time.

Label on the outside of the bucket and on the bag, with contents and the seal date in permanent marker. Ten years from now the difference between hard white wheat and pearled barley is not obvious through a foil bag, and it matters for how you cook it. Keep buckets off a concrete floor on a pallet or scrap plywood so condensation cannot pool underneath.

Frequently Asked Questions

Can I reuse a Mylar bag after opening it?

Yes, if you cut it open cleanly just below the old seal and the foil has no creased pinholes. You lose an inch of height each time, so a tall bag gets two or three lives out of it.

Do I need a bucket if I use thick bags?

For long-term storage on a shelf, yes. Mice chew foil bags open in a night, and a stack of bare bags abrades against itself. Bagged food in a bucket is the combination that survives being ignored for a decade.

How do I tell if an oxygen absorber is still good?

A fresh absorber feels loose and powdery and warms slightly in your hand as it starts reacting. A spent one is hard, cool and clumped. If in doubt, seal one alone in a small bag and check the next day: it should have drawn the bag tight.

Does vacuum sealing replace an oxygen absorber?

No. A vacuum removes most of the air but leaves oxygen trapped in and around the grains, and vacuum bags are not a foil barrier. Use an absorber inside foil; vacuum sealing is for the freezer and for six-month pantry items.
